Nothing is quite like a warm bowl of soup as the weather starts getting cooler. It’s the perfect way to get in the mood for fall and winter. I always love to dig into a loaded potato soup that’s rich and creamy, but dread the prep that goes into it. That’s why I was so excited to come across this hack for the easiest potato soup recipe ever.
The hack went viral on TikTok for how simple it is to put together. The secret? Use a bag of frozen diced hash brown potatoes! This means no chopping and peeling potatoes, cutting down the prep time to just a few minutes.
Follow this simple recipe from TikTok user @hungrysix for the easiest potato soup ever:
- Chop one yellow onion.
- Mix the 32 oz bag of potatoes, onion, one 8 oz block of cream cheese, and one can of cream of chicken soup.
- Pepper to taste.
- Mix in 32 oz liquid chicken stock.
- Cook on low for 8 hours or high for 4 hours.
- Serve in a bowl and garnish with shredded cheese, bacon, and green onions.
This recipe is perfect for the days you’re tight on time or need to run errands but still want a hearty meal. The crock-pot can do all the work for you with little prep!
It’s also the perfect meal to save for another day as it freezes well. Simply let any leftovers cool over night in the fridge and store in a large zipped bag the next morning. It’ll be good for about three months, so make sure to label with the date you made it before popping it in the freezer.
Don’t have time to use the crock-pot?
Although a crock-pot is great for an easy meal, sometimes we don’t have the 4 hours to spare. If that’s the case, this recipe also works well cooked on a stove top.
Grab a large pot that fits all the ingredients and give them a good mix to start. Then leave it simmering for around 45 minutes. You’ll know its ready when all the ingredients have mixed into a delicious creamy blend and the potatoes are cooked through.
Now you have the perfect hack for when you’re craving a warm potato soup!
