No one wants to dig their fork into a slice of chocolate cake and get a mouthful of dried out, crumbly mess. Apparently, there’s a surprising key ingredient for making sure that doesn’t happen: mayonnaise.
Don’t worry, we aren’t suggesting you slather the classic condiment on like frosting. That said, it might sound just as strange to recommend including it in your cake mixture — but home cooks have sworn by mayo’s ability to provide a rich, indulgent result for years!
B. Dylan Hollis, a TikTok user who’s become popular for testing out odd-sounding and old fashioned dishes, gave the mayo trick a try with a recipe from 1956. He claims it was his “most requested cake” from commenters.
As Hollis mentions in the clip below, chocolate mayonnaise cake doesn’t call for “just a little bit” of the condiment. The instructions he followed listed a cup’s worth, but others like Epicurious go for even more with one and one third of a cup mixed in.

Like most of his recipe attempts, Hollis started out skeptical — but ended up totally impressed by the “fantastically moist” results! He doesn’t mention there being any trace of the mayonnaise flavor once the cake was finished baking, but does describe the chocolate as “tangy.”
The mayo essentially replaces oil used in more traditional chocolate cake recipes. It makes sense considering mayonnaise is made of oil, plus egg yolks, and vinegar all whisked into a smooth sauce that adds extra oomph to the cake mix.
You may have noticed that Hollis’ recipe includes mayo in the frosting, too (although he didn’t say how much). He seemed pretty happy with how that turned out as well, but you can just stick with regular buttercream if you don’t want to risk overdoing it on the condiment.
