This Sweet Soup May Sound Strange — But It’s Actually Amazing

When blueberries are out of season, I fill up my freezer with bags of the frozen kind. This allows me to always have blueberries on hand to mix into pancake or muffin batter and add to smoothies. While these are tasty ways to enjoy blueberries all year round, I recently found a simple recipe for blueberry soup that offers a unique twist on my usual go-to recipes.

How to Make Blueberry Soup

Blueberries are packed with antioxidants to help boost your brain health and increase your skin’s elasticity (goodbye, wrinkles!) — just a couple of great reasons to make them a key part of your daily diet. And if you’re looking for another way to enjoy the fruit, this three-ingredient blueberry soup recipe from the Easy Cheesy Vegetarian food blog could be a new favorite in your rotation!

Simply place one cup of frozen blueberries, a quarter teaspoon of ground cinnamon, and one teaspoon of honey or agave in a saucepan over medium heat. When the mixture starts to simmer, give it a stir and smash the blueberries with a fork until it reaches your desired consistency. After about five minutes, take the mixture off the heat and let it cool for two minutes. Garnish with a dollop of plain Greek yogurt and a sprig of mint before digging in.

When I whipped up this blueberry soup, I doubled the measurements for all the ingredients and used Manuka honey as the sweetener. After taking the first bite, I was blown away by how well the spiced warmth from the cinnamon and sweetness from the honey complemented each other. The soup had a thick, slightly jammy consistency rather than being runny, which made scooping it a lot less messy. I also made sure to keep a good amount of the blueberries whole when cooking the soup, so I could get a burst of berries with each bite.

Although soup is usually a savory dish, I’m happy to say that I’ll be making this sweet version all the time as a treat for breakfast or dessert!

This soup is a game-changer for me because I thought I knew every possible way to use up my stash of frozen blueberries. Now I have one extra recipe to add to my repertoire of blueberry recipes!
